Puglia can be divided into three tourist areas: the Gargano and the Adriatic and Ionic coast, the Valley of Itria the "Murge of Trulli" and the karstic caves.
The Promontory of Gargano is a mountainous peninsula which stretches out over the Adriatic Sea, the highest point is Mount Calvo (1000 metres of altitude); the shores are high and rocky, while on the South-West you can find little inlets.
The most important seaside resorts are Vieste, Rodi Garganico, Peschici , Pugnochiuso and Manfredonia. On the Ionic Coast we can suggest Leuca, Gallipoli, Santa Maria al Bagno and Porto Cesareo. The third area of interest is represented by the " Murge of Trulli" and by the inland provinces of Bari and Brindisi, characterized by very fertile country and by centuries-old vines and olive trees.
The Valley of Itria, between Locorotondo and Martina Franca, includes Alberobello (which became famous for its "trulli"), Putignano, Mottola , Cisternino and Castellana Grotte. Some trullis were built in the Seventeenth Century, others in the Nineteenth Century, with the permission of the Feudal "Signore" given to the farm workers and day labourers; these were the first modest houses in which they could organize their patriarchal and rustic life, after abandoning the natural caves of that area.
The architecture of these little buildings adapts well to the stone of the area and to the dry-stone walls, which still today keep these houses warm in winter and cool in summer.
At Andria , in the province of Bari, we find Castel Del Monte ; commissioned by Frederick the Second of Swabia in 1240, as a residence and not as a fortress (as demonstrated by the lack of any defensive works, such as a ditch or drawbridge), today it is internationally known for its unique octagonal form and for its symbolic suggestions. We also suggest the Castles of Barletta, Canosa, Trani, Andria, Ruvo, Corato, Terlizzi, Bari and Gravina. We mention the city of art, Lecce for its particular baroque buildings and Otranto , which is also a seaside-resort and the spas of Torre Canne Terme and S. Cesarea Terme.
LOCAL CULINARY SPECIALITIES:
First of all, the olive oils of Collina di Brindisi, Terra d'Otranto, Terra di Bari and Dauno and the bread of Altamura, bread with olives and onions, "focacce".
First course : "orecchiette with cime di rapa" (ends of turnips), "cavattiedi" with chickpeas, "troccoli alla dauna", vegetables soups, lasagne with eel sauce.
Second course : fish, such as oysters, roast "cannolicchi" , cuttle-fishes, red mullets, ?arracanate? mussels, gilthead; meat, such as ?gnummerieddi?, roulade with the entrails of lamb; cheeses, such as strong ricotta, "canestrato, fior di latte and burrata"; coldcuts, such as brawn and the neck of beef of Martina Franca.
Desserts : carteddate (at Christmas), or scarsella (at Easter).
Wines: Uva di Troia, Bombino Bianco e nero, Aglianico, Pampanuto, Chardonnay, Sauvignon, Pinot Bianco e Nero, Castel del Monte Rosso, San Severo, Locorotondo, Martina Franca, Gravina, Nardò, Matino, Leverano, Primitivo, Moscato di Trani and Aleatico.
